Baba's Blueberry Cheesecake Recipe | Only bake the crust!
This is my partner/husband's Baba's recipe that my Mother-In-Law Patti was so kind to share with me! The recipe is as follows:
Preheat oven to 350F. Combine 2 cups of ground graham crackers with 1/2 cup melted butter and 1/2 cup of sugar. Press mixture into bottom on 9x13 pan and bake for 8 minutes.
In a bowl combine 8 oz softened cream cheese with 1 cup icing sugar with a mixer. Once combined, fold in two tubs of cool whip. Spread half the mixture over the cooked crust. Layer 2 cups of fresh or thawed blueberries in an even layer. Top with the remaining cream cheese mixture. Place the cheesecake in the fridge to cool.
